Hi Lois, Velveting is optional for this recipe as the beef is fried until it is crispy on the outside so tenderness is not as critical

Very easy and delicious, perfect for a healthy and satisfying midweek dinner. The velveting with a tiny amount of bicarb makes all the difference, super tender beef! I found two lonely mushrooms in my fridge that I sliced up and added when I fried the garlic and ginger, but otherwise followed the recipe faithfully.

I struggle to find Chinese cooking wine where I live and even my trusty substitute dry sherry is no longer available (what is the world coming to??). For anyone in a similar predicament I have discovered dry vermouth works well too.

This was very, very good. I added a little red pepper flake and toasted some sesame seeds for the top. Otherwise followed exactly. Many of these recipes do not velvet the beef and that is a HUGE mistake. Thanks you this was excellent.
